Sweet Chilli Sauce

I'm not sure if I shared with you, or not, but I started a little veggie patch in our backyard. . . Well, I got my first harvest!! Some mild chili's. I'm actually not a chili fan, I don't really like spice :(  so, I had to find something to use with them all... I decided on trying a sweet chilli sauce.

Ingredients :

- 1 red capsicum
- 1 apple
- 6 mild chili's (or 4 medium)
- Salt and pepper
- 1 cup red wine vinegar
- 1/4 cup raw sugar
- 2 cups boiling water

Directions :

1. Finely cut capsicum, chili and apple, making sure you throw away seeds

2. Put boiling water and cut capsicum, chili and apple in a pan and simmer on low heat for 30 minutes

3. Remove pan from heat and drain water away

4. Puree this with a hand mixer

5. Clean pan out, put puree in cleaned pan and return to low heat

6. Add sugar, salt, pepper, and vinegar to pan

7. Leave to simmer for 45 minutes, stirring occasionally

8. Remove from heat. Prepare 250ml container. Place sauce on container.

9. Store sauce in a cool dry place.

Should be consumed within 12 months.

Six Months Down, a Lifetime To Go

On Monday, our precious little girl turned six months old. On one hand it feels like it has dragged on, and that I've faced several battles I wasn't expecting.. But on the other hand, she seems to have grown so very much!!

I have managed to successfully feed her exclusively via breast for these first important months, however now that I am back at work I am finding that incredibly hard to do. For some reason, I just can't seem to produce for the pump after mid morning.

She also got her first cold this week, should have expected it from daycare but was hoping the milk might help. I felt so sorry for the poor little blighter... Running nose, constant dribbling, red wet eyes, and next to know appetite. Made me feel completely useless!!

The wondrous things though are the gabbling to us, the attempts at saying mum and da-da, the beginnings of crawling, the army crawls, those precious hugs, the big smiles she throws our way when she hasn't seen us for anything more than an hour, the giggling, the laughing at the dogs, and just general living really.

I never thought I would take to this whole 'mum' thing... But I've really surprised myself. I've probably surprised a whole heap of other people too, I have never been clucky around babies or children. What many didn't know though is I'm pretty ace at dealing with children. . . It was just great that they weren't mine, and I didn't have to worry about their daily living requirements.

Six months down, and a lifetime to go of being a mother - all that it entails. I'm happy that we've made it this far, and if I say so myself... We've done a darn fine marvellous job!! I can't wait to see what comes next!!

Joining a Gym

There is a certain subject that people tend to discuss, but not very truthfully.. And that's their health and fitness. Nobody wants to admit that slip up when they ate that cake, or that night they decided to skip their workout and vege out in front of the tv instead.

My current private truth is that I put on just over 30kgs during my pregnancy, with the last 10kgs going on in my last three weeks of pregnancy. I had every intention, upon giving birth, of losing this weight and returning to my former, much fitter and finer, form. However, as the months progressed I became more and more comfortable with this extra weight that I was carrying around.

With a new little person in the house, I soon realised how incredibly fantastic I am art creating excuses.. So, I slowly sold off the home gym. All went apart from hubs big weights set (his decision as to what he'd like to do) and my boxing set.

After one week of returning to work, and struggling to fit into that old uniform, I realised something had to be done and I had to stop standing in my own way.

I have now joined my local gym, and although I unfortunately caught a cold, I am an eager beaver to get into it and see how I progress - I shall keep you all updated!!

Wild Strawberry Organisational Tips

1. Keep your laundry sorted. When ever you do your washing, make sure you fold and put away your clothes straight away. This will help to keep your clothes in top condition, and will also help you keep you wardrobe organised, which hopefully will result in purchasing less clothes too. Whilst you're putting your clothes away, start sorting your closets - by style, colour, type - however you normally choose your outfit is how you should sort it. This is slightly different for everyone.

2. Create a binder system for your receipts. This is infinitely helpful come tax time too. For example, I create a binder for each tax year and then use dividers to split that year into type... I.e. Tax correspondence, superannuation, motor vehicle, property, shares, work, donations, and so forth. I also create other folders for ongoing important information, such as study, Work, bills (also divided by supplier), children (individual folders), and properties (purchase information,  installation receipts etc)

3. Instantly rinse dishes after using them. This makes it MUCH easier to wash up later, quicker by hand or a lighter cycle with a dishwasher.

4. Utilise your storage space. You can use boxes, and wire trays to store smaller items. Label these for future reference, and when you do your regular purging, ensure you check these boxes for items you haven't used for a long time.

5. Assign 10-15 minutes per night, before everyone's bed time, to do a quick clean. This can include putting items away, wiping down benches, sorting laundry, loading dishwasher. Ensure everyone is contributing, even the youngest of children can easily learn to put things away.

6. De-clutter your home, remove all the distractions from view that seem to make it ok to pile the mess. Remove as many kitchen gadgets as you can from the bench and into cupboards that are easily reachable for all ages. Also, remove as much ' decoration' as you can, as it only adds to how much you have to clean.

7. Put to use one of my favourite things... The to do list! Write a detailed list of the home maintenance (and possible improvements you wish) in a list, then re-write that list in a prioritised list and stick in a prominent place, such as your fridge. Cross these off as you do them (I also like to have my list of goals next to this list, as for me they go hand in hand)

8. Establish a routine. They say if you do something for 30 days straight, it will become a habit, so why not create a routine that will soon just happen naturally!?

9. Finish what you start. Seems simple enough, but once all those distractions start (um, hello child, what are your needs?), it can be easy to forget what you were doing, or want a change and move on. You may as well get the chore over and done with, otherwise that time you did spend on it will have been wasted.

10. Once your surface materials are organised, it's time to start on your digital mess. For example many people just save all the photos in one folder on the computer, and others have all their apps loaded on the phones home screens. Sub folders are great for sorting these out, you can use whatever system you like, but I love date order. I use the Japanese date order, for example when we went to Norfolk Island a couple months ago I sorted them in my pictures folder,with sub folders named '20130928_Norfolk_Is' (and so forth)  so year - month - date - relevant search term. This keeps them easily identifiable at a quick glance, and also very ordered.

Returning to Work

I have just finished my first week back to work, and I am exhausted! Little one has been put in childcare four days a week... Which isn't my ideal, but we had little choice. Luckily for us, the government appears to be paying more for care then we had originally anticipated, so that fourth day was what I had calculated for three. Yay!

Monday was a big day. It was both my first day back at work, and also little misses first day in care. However, and I feel terribly guilty admitting this.. I was not upset, miserable, anxious, or any other preconceived emotion that every was telling I would have without doubt. Instead, I felt free. It was the first time I had been without baby OR family. Yes, I may be going to work - but, I like my job, I like the people at my work, and I like the type of work.

There have been two major things about my work that I never thought I'd enjoy so much. First - the drive to and from work - I have always LOVED driving, and with a baby it's been ridiculous to just jump in the car and go. Secondly - no one constantly harassing me - there has been no baby needing my attention, no visitors that expect me to converse with them... I am just left to be at work.

My postpartum is definitely lessening as a result. I am being treated with respect and privacy. No one asks me questions about every minute of my day. But, much more importantly, I appreciate the time I do have with little one now. Those little hugs she gives, the big smiles when she sees you after a whole 5 minutes,  her occasional gabbling, her need to always hold my hand, and the closeness of breastfeeding.

I have severe case of guilty mum syndrome now though. I feel guilty about leaving her in the care of others. I feel guilty that this isn't how I used to feel with her. I feel guilty that I catered to others wants over my own desperate needs. I feel guilty that I don't have the need to constantly check in on her.

What I've come to the realisation of is, I am going to feel like this for the rest of my life. I want to provide everything I possibly can for little one, and with that comes guilt. I will never get everything right, and I will always have a hindsight to look at. However, what I do need to now learn is to ignore that. Accept that I am doing my utmost very best in the situations that are thrown my way, and every single one of us has different situations, different beliefs, and different values.

I'll add that to my 'to do' list!!

Mango Conserve

It's almost summer, and that means it's juicy mango time! Each week, after swimming, there is a little road shack we visit that sells massive watermelons, spiky pineapples, and bags of mangoes. Little baby girl has been loving to have a suck on these too (what a good little Queenslander!), however we had a couple left over at the end of the week and I didn't want them to go to waste... So, I made a mango conserve from them.

This made approximately 500ml

Ingredients
- 3 ripe mangoes
- 1/2 cup lemon juice
- 1/2 cup orange juice
- 2 cup caster sugar

Directions
1. Cut up the mango and then mash it up
2. Pop the mashed mango in a saucepan on medium heat
3. Add the lemon and orange juices
4. Slowly add in the caster sugar, mixing as you go
5. Cook on medium for 30 mins, stirring occasionally. You will know it is ready to jar when the mix starts to form a film across the top when you stop stirring
6. Remove saucepan from heat and sterilize your jars with boiled water
7. Whilst still hot, spoon mixture into jars. Seal. Leave to cool for 10-15 mins before placing in fridge

Banana Cake

Not long after I started dating dear hubby, I made a batch of banana bread and he absolutely loved it (he also really loves my brownies!) Every now and then I try something else banana based, but it never seems to live up to my banana bread...

So, I've tweaked my banana cake recipe to be a little bit more like my bread.

Ingredients:
- 4 mashed bananas
- 50g butter melted
- 2 cups plain flour
- 1/2 cup caster sugar
- 1/2 cup milk
- 2 eggs

Through them all in a bowl together and mix until smooth. Place evenly in a bowl and pop in oven at 200 for 30 mins.

The cake will look heavier than normal, which is why it's more similar to bread.. But it isn't as heavy to eat! (I still recommend slim slices though)

Budget Boredom Busters

For the past several months I have been (happily) stuck at home with my baby girl. This has been a fantastically fabulous budgeting experience, as we learnt to basically survive off the one income. However, more frequently than I'd like to admit, I got bored hanging around the home all day... So, here are some budget boredom buster tips that I learnt!!

* Join your local library. Not only can you read books without the expensive outlay of buying them, and invest in creating a healthy reading habit in your little ones... But, most libraries now hold activities for free that you can get involved in.

* Expand a hobby. This is an extension on point 1! Get reading on a skill you'd like to build, for me at the moment that is gardening, as I'd like to be as self sufficient as realistically possible (more on that another time)

* Go for a walk. Load up the pram, and give those pets of yours some much needed exercise. Hopefully, you might even get fit yourself!

* Rearrange your furniture. A new layout in the home can feel just as good as a holiday, and you might even find you've got a bunch of stuff you don't need that you can sell for rainy day money.

* Instead of catching up with your friends and other loved ones at a restaurant or coffee house, why not go to the park ore the beach instead? Even if you don't have kids, you can still act like one.

* Visit the museum. Some are free, and some are a small fee, but even in small museums I can easily spend half a day. There is always something else interesting to find.

* Visiting a gallery isn't just for stiff upper lip types... Modern art can be really quite funky, just as ' traditional' art can be calming. Occasionally, some larger galleries hold interactive activities for both the young and the young at heart.

My Baby Blues

I have a very beautiful baby girl, she is the apple of my eye and can easily bring a smile to my face. However, I have been suffering from mild depression since she was born (if not a little just before she was born, if I'm here to speak the truth).

I have a skill that has both helped and hindered me through life... I have a great ability to shut my emotions off, put a smile on my face, and get on with the job. Whilst this has many virtues in a workplace environment, particularly sales, it can really be a blockade when trying to seek help with any emotional turmoil. . . Such as post partum depression.

I have tried to open up to a few different people about my issues, however the responses are far less than helpful. They include:
- "but, don't you love her?"
- "why don't you just pop some pills?"
- "you're not a single mum"
- "I've seen you smile"
- "but, you're such a good mum"
- And the worst, was just completely ignoring the fact that I'd even spoken and changed the topic!!

The sad thing is, I'm not seeking a miracle cure, I simply just want to be understood. The odd, "it must be hard" would certainly not go astray. Maybe, it is my own fault, and I've stretched myself to thin... But, isn't that was is expected of us, the modern day woman? I cook, clean, bake, study, garden, look after baby, do the finances, and I return to full time work in a week just to top it off.

So, what exactly is it that I want? I want someone, and not just anyone, but a loved one, to listen. I want someone to offer me some free time, despite how selfish it makes me feel. I want the misconceptions of weight loss and breastfeeding to stop. I want the judgement to stop. I want the nasty little comments to stop. I just want to be heard, as the person that I am, and was, before I became a mother. I want to be treated as a whole human being, not a thing that just feeds and looks after the infant. 

I want to feel comfortable in my own skin, with my own thoughts. And I want the same for every other mother.

Gooey Choc Bubbles

This weeks sweet treat is a result from a pantry clean out. At some point in the past, we'd purchased rice bubbles for whatever reason, and upon the clean out realised they were extremely close to expiry. Time for some inventing!! I'm calling these my Gooey Choc Bubbles!!

Ingredients:
100g butter melted
3 cups rice bubbles
100g marshmallows chopped
1 cup plain flour
1/2 cup condensed milk
1 cup cocoa
2 eggs
1/2 cup milk
1 tbsp golden syrup

Topping:
1/3 cup condensed milk
1 heaped tablespoon cocoa

Extremely simple directions:
1. Preheat oven to 200 Degrees Celsius
2. Mix all ingredients in a bowl together
3. Pour out mix evenly into a 20x30cm tray
4. Bake for approximately 25 mins
5. Leave to cool for 5-10 mins
6. Mix topping ingredients together in a small bowl
7. Heat small mixed bowl in microwave on high for 1 min (watch, as may spill over)
8. Pour over cooled slice
9. Leave for another ten mins to cool
10. Slice and serve!

I'd hate to think how many calories are in these, but I hate even more throwing out an opened box of anything!!

Financial tips

Some of you may know this, some of you may not.. But I used to work in the financial services industry. Studying and working this field gave me some great skills to use for the rest of my life.

I have five rules that I live by day to day, they are standard rules but crucial ones.

1. Pay off high interest rate debt first.

Whether this is a credit card or personal loan, sit down and work out all your rates and minimum payments. Then pay as much as you can in extra payments on your highest interest debt. Once this is paid off, use it to snowball effect your other loans, use the money you were putting towards that first debt to your next and so forth.

2. Know your budget.

Keep track of where and when your money is coming and going. This will give you a better idea of your financial standing, and whether you really can afford that item you've got your eye on. I keep a monthly budget on our fridge, which I enter into an excel spreadsheet at the end of the month.

3. Spend less than you earn.

Pretty obvious really. Using a budget will tell you if you're achieving this.

4. Diversify your savings.

It doesn't matter how much you have, it does not have to be $10k!! You can invest in a variety of options from shares to bonds to gold and more. The key is to diversify, and the younger you are the higher the risk you can take.

5. Add to your super.

In Australia we are lucky enough to have enforced employer contribution, but even when this eventually increases to 12% this still is not enough for you to retire on.

They are a lot of other little rules that I use, but these are the big basics that must be adhered for financial success.

Emergency Chocolate Cake

In case you haven't cottoned on yet, I have quite a bit of a sweet tooth. I was having my normal afternoon chocolate and sugar craving, with nothing to fulfill it .. So off to the kitchen I went. However, I quickly learnt we had nothing to fill this craving so I was going to have to bake.. Yet again!

However, there were no eggs or milk in the house. So, what's a girl to do?

If you want a basic chocolate cake, but either due to allergies or your due for shop you can't have eggs or milk,then this is for you!

Ingredients:
1.5 cups self raising flour
3 tablespoons cocoa
1 cup caster sugar
1 cup water
1 teaspoon imitation vanilla
1 tablespoon white vinegar
0.5 cup vegetable or olive oil

Directions:
Simply mix all the dry ingredients together first, then add all the wet liquids. Whisk together, and then pour into a cake tin. Bake for 40-45 mins. Leave to cool before icing.

Icing:
1 cup icing sugar
1.5 tablespoon cocoa
Water - add slowly until desired thickness!

An easy simple recipe that will last the week to fill my cravings. Yum!!

Facebook bullying

Our little baby girl recently turned five months, and whilst it's taken some adjustment, I love being a mum. When I was pregnant I joined a few Facebook groups, as we don't know anyone in our area and most of the friends we had within an hours driving distance have also moved. I thought this would be a great way to meet other mums.

But, oh, how I was wrong!! Years ago, when I'd move to a new town, you could jump online to meet some people and within a couple weeks you'd have friends to chill with that had similar interests. Now however it seems like the internet has become a platform solely for bullying people that don't 100% have your views.

I have since deleted myself from the vast majority of these groups. Even just agreeing with someone else's opinions can bring you a swarm of abuse. Why do people think this is an ok thing to do? Sadly, the more I think about it, the sadder I get about the life my children will have.

When I grew up, I got bullied in school and I got bullied by neighbours.. But, at least I could feel safe from the cat calling in my home. However, this can no longer be said and it stresses me no end that my children won't have that.

What are your thoughts on cyber bullying? Do you think Facebook is leading this horrible trend?

Chalkboard Freezer

This is my solution to two insignificant problems that were annoying me. The first problem was we had an old rusty chest freezer that was given to us, and for space and convenience is situated outside. Calling it an eyesore is definitely an understatement (I really wish I'd taken a before photo!)

The second problem was more of a wish. When I was a little girl, my grandparents painted part of their backyard fence with a massive chalkboard. I absolutely loved it!! However, the only spot in our yard that suited this was also the best and easiest spot for my veggie garden (more on that another time) 

So... What is a girl to do? Paint that ugly freezer with chalkboard paint!!

It was such a simple and easy process. First I thoroughly cleaned the chest freezer down. Then I found an old pot of blue chalkboard I bought from Spotlight ages ago for a different project. The blue would certainly not work with the freezers surrounds, so I got some of my green and gold acrylic paints to mix a more 'organic' colouring.

Overall, I'm pretty happy with the finished project. It goes perfectly with the work we're doing outside, we want to actually keep the old freezer now, and even better we have an extremely low cost fun activity for our children to play with when their older.

Hello!!

I hardly ever use my desktop computer anymore, it is really only used for study, accounting/tax, and personal budgeting. As such, I haven't really been updating the blog - oops! However, I believe I have finally got blogger to work on my phone, so expect the posts to be more frequent from now on!

Spring Clean #1

It's that time of year again... the old spring clean! I both loathe and look forward to spring cleaning time. On one hand, it's a darn dirty job, but on the other I know that once it's done the house is shiny clean! I set myself one room per week (sometimes two, if they are tiny rooms), which takes up my entire spring. So far, I have finished our kitchen and one of our lounge rooms. I looooove to see all of my Tupperware all sorted, stacked, and organised!!

Not long before Violet was born (it's amazing how fast time flies.. it's been over three months already!), I decided to minimize the amount of chemicals in our home. The first, and easiest, step to do this was to change our general house cleaners. Now, all I need for general day to day use is two sprays that I have made, along with gumption (I don't know if I'll ever be able to give that baby up), and bleach.

The first spray is made up of 1 tablespoon of Bicarbonate Soda, 5 drops Lemongrass Oil, 3 drops Tea Tree Oil, and then filled with water. I shake this thoroughly before each use. This is a great cleaner, I use it for a multitude of purposes, including floor scrubbing, on furniture to stop the dogs from peeing, oven cleaner, rust, mold, and anything really, really sticky. This mix of oils is a bit of a bug repellent too, however the Bicarbonate soda can leave a residue behind, so I use my other spray afterwards quite frequently. Oh, and don't use it on your coloured home walls as it can cause fading.


My second homemade spray is made up of 1 cup white vinegar, 1 shot vodka (rubbing alcohol is preferable, I just like to use up my clear spirits that I don't want to drink anymore), 4 drops orange oil, and then fill with water. This is my "quick clean" spray, used for benches, tables and even streak free windows! A bonus of the orange oil is that it is a natural deodorizer, so if you accidentally spill milk in your car - this will remove that stenchy odour that seems to always linger for days (I seem to always spill milk if I have it in our car).

In The Kitchen... Ginger Beer

I recently decided to start saving money, and my health, by making as many things at home as I possible can instead of purchasing them. This is no easy task, as I have always been completely useless in the kitchen. In fact, DH has always had to do any of the cooking in our household... and I appreciate it immensely! But now that we have little miss in the house, I thought it was time I step up to the plate and contribute in the kitchen. From now on, any meals, baking, beverages, or just anything in general, that I find easy to do - I shall share with you!!

I have started with a simple to make, refreshing and one of my all-time favourite beverages, Ginger Beer. It is simply superb on a hot summer day. This recipe will make a 1L – 1.25L bottle of Ginger Beer (depends on the bottle you use). Also, I encourage you to play around with it as we all different taste buds!!


Ingredients / You Will Need:

-  1 cup finely grated or chopped ginger
-  2 lemons juiced
-  1 cup hot water
-  1 teaspoon brewer’s yeast
-  ½ cup raw sugar
-  1 plastic bottle
-  Jug room temp water
-  Glass bottle / jug
-  Cheesecloth


Process:

1.       Pour the sugar in bottle, along with the hot water to dissolve.
2.       Add grated ginger, and lemon juice to bottle.
3.       Shake vigorously, and then leave to sit for approximately 1 hour.
4.       Add brewer’s yeast, and then fill the bottle with room temp water – ensuring to leave enough space at the top (I generally stop when the top starts to get small again)
5.       Shake bottle to mix up ingredients.
6.       Leave to sit for 24 – 48 hours. The longer you leave it the more intense the flavouring will be.
7.       Pour contents into your desired bottle/jug, using your cheesecloth to sift as you pour.
8.       Pop this bottle/jug in the fridge to cool.
9.       Serve with ice.

10.   Enjoy your refreshing hard work!!
